Prospectors Recipes

Anyone have a good recipe to share? I have a few.

 

Sourdough Pizza; ( can be baked in Dutch oven, or regular camp oven)

 2cups of Busquick mix

 1 egg

 1/2 cup buttermilk

 1 can pizza sauce

 1 package sliced pepperonis

 2 cups shredded marble jack cheese

Mix the bisquick,egg, and buttermilk into a slightly thick mixture, and bake for about 30 minutes, or until slightly brown, add pizza sauce, top with pepperonis, and cheese, bake for an additional 15 to 20 minutes, or until cheese is completely melted.

( Depending on the size of the pan, serves 6 to 8 from dutch oven, serves 12 to 14 from a large cake pan)

can substitute pepperoni for ham, sausage, beef, etc.  Try adding other things, like olives, and bell pepper slices, or mushrooms.

Moms Homemade Salsa; (WARNING: Not for the timid)Serve with corn chips, or on eggs

1 cup chopped onion

2 to 3 tomatoes, pureed

1/2 cup green peppers, chopped

3 tablespoons Cilantro

1 teaspoon ground garlic

Mix all ingredients together, serve as is

approximately 2 to 3 servings

(to mild it out a bit, add a teaspoon of lemon juice, that will lessen the burn)

    (PRIBILOFF ISLAND ALASKA)
    MAKES 4 LOAVES OF WHITE BREAD
    POUR: 1 1/2 C. BOILING WATER OVER
    3/4 C. SUGAR
    5 tsp. SALT
    2T BUTTER
    ADD:1 - 12 OZ. CAN EVAP MILK
    1 C. COLD WATER
    2 SLIGHTLY BEATEN EGGS
    2 T. PWD. YEAST (REGULAR)
    DISOLVED IN 1/2 C. WARM WATER, ADD TO ABOVE
    MIX IN: 6 C. FLOUR - BEAT THOURGHLY
    ADD IN: 4 C (+ / -) MORE FLOUR, MIX IN 1/8 TSP. OF BAKING PWD.
    (MAKES A FINER TEXTURE IN THE BREAD, NO HOLES).
    MIX ONLY ENOUGH FLOUR UNTIL THE DOUGH BEGINS TO COME AWAY FROM THE SIDES OF THE BOWL,IT WILL STILLBE A LITTLE STICKY. IF YOU PUT TO MUCH FLOUR IT WILL MAKE A TOUGH BREAD.
    RISE 2 X THEN MAKE INTO LOAVES, ROLLS OR COFFEE RING.
    COFFEE RING: PRESS, PUSH, PULL, LIFT THE EDGE AND SHAKE AS YOU PULL, (NOT ROLLED WITH A ROLLING PIN) INTO A VERY THIN RECTANGLE -SMEAR WITH BUTTER (SOFTENED), SUGAR AND LOTS OF CINNIMON, TELL IT LOOKS BROWN, CAN ADD RAISENSAFTER SOFTENING IN A LITTLE IN WATER IN THE MICROWAVE, PAT IN PAPER TOWEL TO DRY, NUTS TO YOUR LIKING.


    this stuff also makes killer sweet rolls

    For something different with zucchini is slice it about 1/4 of an inch coat with olive oil or what ever oil you like sprinkle with some garlic powder and Italian seasoning and place on a hot grill flipping once and cook till fork tender. Real simple and good to boot.
  • Yup, Zucchini is good, I wish my mom would give me her Zucchini bread recipe, I could post it here. :/

  • I like to now if people may have recipes for Zucchini. You now this is the season for them to be used. I like cake, bread, mufffins, and fried, and fried is good but a change is good. and I do use it like noodles to.
  • Hay Tinpan I thing that the recipes are a great ideal, because we go camping for a week at a time a eating the same old starts to plow, so I hope more people add to this.
  • TACO BAKE
    1 pound of burger browned up
    1 cup of minute rice
    1 pack of taco spices
    1 bag of cheese
    you mix all together with a cup and a half water
    then put the cheese on top
    when the cheese is melted it is ready to eat
    you can add tomato's to it and lattice
    • oh and it take 10 minutes tops
    • Peruvian Salsa

      My husband brought this recipe home from a co worker who was from Peru and it quickly became a family favorite.

      Two large tomatoes, diced fine
      one red onion, peeled and diced fine
      juice of one lemon
      small handful fresh cilantro, chopped
      salt to taste

      you can also add chopped jalapeno....mmmm
      • Peach Cobbler

        One large can peach halves or slices
        1 teaspoon nutmeg
        1/2 cup brown sugar
        1 tsp lemon juice
        3 tablespoons cornstarch

        stir together and top with one yellow cake mix, dry....cover peaches and top with 1 stick melted butter. Bake in dutch oven uncovered 350 degrees 35-45 minutes until top is brown and not gooey in the middle any more.
